White Chicken Chili

This is comfort food at it's best for me! White chili is on the lighter side of chilies and made with chicken and a delicious broth. So satisfying and delicious!

Equipment

  • 1 Medium sized sauce pan

Ingredients
  

  • 2 cups chicken broth
  • 1 can navy beans, rinsed and drained
  • 1/2 cup frozen corn,
  • 1 can Rotel diced tomatoes and green chilies, drained
  • 1 cup diced chicken, cooked
  • 1 teaspoon minced dried garlic
  • 1 teaspoon cumin powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 cup heavy cream
  • Pinch Salt & Pepper to taste

Instructions
 

  • Add all ingredients except chicken and cream into a medium sized saucepan. Heat on medium heat and simmer for approximately 10 minutes, or longer. Add chicken and bring to a low simmer. Turn off heat and add cream.
